Mini Maple Cinnamon Apple Pancake Dippers with Apple Cider Syrup are a fun and healthy breakfast that your kids will love or make them for a brunch.

Pancakes have become a staple in our house. On nights when my husband has a work dinner, my little one usually chooses pancakes for dinner. I’ve developed a recipe that is low fat, low calorie and healthy and is so versatile. We now make many different flavors. Apple Pancake Dippers came about when I saw these adorable little pancakes on Mother’s Niche . I just adored that she used a madeleine pan. I just happened to have the pan because I have been meaning to make the cookies. Well, I used them for pancakes instead. Don’t they look so cute in a shell shape? Don’t worry if you don’t have this pan, you can use a mini muffin tin. I used my own pancake recipe and streamlined the recipe to speed up the prep time. These were a big hit. They would be perfect on a brunch buffet.

I added some whole wheat flour and Greek yogurt. They are loaded with delicious and healthy apples. They are even perfect to pack for lunch. You can even make a big batch and freeze them. So there is no excuse for not eating breakfast before you head out the door. One of my daughter’s other favorite things about these pancakes, no forks needed. These are finger food. Go ahead and pick one up and dip into a little pure maple syrup. You will be coming back for more.

Print Mini Maple Cinnamon Apple Pancake Dippers with Apple Cider Syrup
Prep time: 10 mins Cook time: 15 mins Total time: 25 mins
Serves: 6 servings
Ingredients
  • 2 medium apples (I used what I had on hand, one Golden Delicious and one Gala)
  • ½ cup (60 grams) all-purpose flour
  • ½ cup (60 grams) whole wheat flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. kosher salt
  • ½ tsp. ground cinnamon
  • 1 large egg, lightly beaten
  • 3 tbsp. 2% fat Greek yogurt
  • ¼ cup non-fat milk
  • 2 tbsp. real maple syrup
  • ¼ cup organic apple juice

Instructions
  1. Preheat an oven to 400°.
  2. Spray a Madeline pan or mini muffin tin with baking spray.
  3. Grate apple on the large holed side of a box grater.
  4. Place grated apple in paper towels. Hold over a measuring cup and squeeze out the liquid catching it in measuring cup. Put apple aside.
  5. In a large bowl, whisk together first 6 ingredients.
  6. Stir in the egg, yogurt and grated apples.
  7. Stir in ¼ cup of the apple juice and milk.
  8. Spoon mixture into prepared pan.
  9. Bake for 8 to 12 minutes.
  10. While pancakes are baking, add remaining apple juice and cider to a sauce pan.
  11. Bring to a boil and reduce to a simmer.
  12. Simmer until liquid has reduced by half.
  13. Brush onto hot pancakes and serve.
