Dark Chocolate Pumpkin Bark

Dark Chocolate Pumpkin Bark is a fun and slightly healthier Halloween Treat. Make your own candy and control what goes in it.


The pumpkin obsession continues. I sure hope you are not sick and tired of pumpkin everything. All year long, I deprive myself of pumpkin and then go hog wild over the holidays. I’ve been throwing it in everything, which you probably know. Pumpkin is so versatile. It works in savory dishes and sweet dishes. It is loaded with Vitamin A and anti-oxidants. It is also easy. I have to admit pumpkin puree is one of the few foods, I prefer from a can. I’ve made my own pumpkin puree, but it just doesn’t taste as good to me. You can certainly use homemade pumpkin puree in this Dark Chocolate Pumpkin Bark. Maybe you can tell me the secret. I just don’t find it as flavorful.

I saw some Chocolate Pumpkin Bark in a store and was automatically enthralled. I thought it would be fairly low calorie, but a quick look at the nutritional value dashed any hope I had of that. Boy was it loaded with sugar. It just seemed silly to me. They had to have worked to make it that fattening. It was a no-brainer to lighten. I wanted to run home and make a batch, but I was meeting some fellow Atlanta bloggers for lunch. Sitting and talking with food bloggers is so much fun. They get my giddiness over corn fritters and fish sandwiches. They understand burning the roof of your mouth, because you can’t wait to taste that delicious morsel. Looking around the table, you can see the pleasure of each flavorful bite on everyone’s faces and, of course, dissecting each flavor profile to figure out what is in it. What could be more fun? I always leave these events so motivated and with a big smile on my face.

The only thing that would match that fun was coming home and putting my idea for a healthier Dark Chocolate Pumpkin Bark into action. Even better, it worked. Oh yes, no recipe flop here. I love the balance of flavors in this candy. The dark chocolate adds depth and that, oh so satisfying, chocolate flavor. The pumpkin holds its own lending that pumpkin pie flavor. What could be better than dark chocolate cradling vibrant pumpkin. Pop a piece in your mouth and enjoy the sensation and flavor.

Print Dark Chocolate Pumpkin Bark
Prep time: 5 mins Cook time: 3 mins Total time: 8 mins
Serves: 24 pieces
Ingredients
  • 2 tbsp. pumpkin puree
  • ½ tsp. ground cinnamon
  • ¼ tsp. ground Ginger
  • ⅛ tsp ground nutmeg
  • 12 oz. bittersweet chocolate bar, chopped
  • 4 oz. white chocolate bar, chopped

Instructions
  1. Place a piece of parchment paper or a silicone mat on a jelly roll pan.
  2. In a small bowl, stir together pumpkin puree, cinnamon, ginger and nutmeg . Set aside.
  3. Place bittersweet chocolate in a microwave safe bowl. Microwave on high for 30 seconds.
  4. Stir and continue to cook in 10 second increments until chocolate fully melts when stirred.
  5. Pour onto the parchment and spread out evenly.
  6. Place white chocolate in a microwave safe bowl. Cook on high for 15 seconds.
  7. Stir and continue to cook in 10 second increments until chocolate fully melts when stirred.
  8. Quickly stir in the pumpkin puree.-
  9. Spoon over the dark chocolate and even out with a spatula.
  10. Let stand until chocolate is firm. Break into pieces.
  11. Store in a cool place for up to 3 days.
