SOUTHERN COCONUT CHESS PIE...IT'S NOT JUST PIE

And it truly is "just pie": a simple, one bowl affair that is the staple of the Southern cook that is pure comfort food."

SOUTHERN COCONUT CHESS PIE 4 large eggs 2 teaspoons flour 2 cups sugar 1/2 cup butter, softened 1 teaspoon vanilla 1 cup milk 2 cups flaked coconut 2 unbaked pie crusts

    Preheat the oven to 350 degrees. In a large bowl, beat the eggs, then beat in the flour and sugar. Beat in the butter, vanilla and milk, then add the coconut. Pour the filling into the unbaked crusts and bake until golden and the filling is set, 40-45 minutes
