This is an easy and quick version of semolina cake with syrup. In Greece, this syrupy sweet cooked on griddle is called samali and is ideal dessert for the summer, as it can be served with vanilla ice-cream ... a divine combination!
For the cake
2 cups semolina flour 1 cup sugar 1 cup margarine 6 eggs 1 teaspoon vanilla extract powder 1 sachet baking powder 1 spoon lemon zest For the syrup
2 1/2 cups water 2 1/2 cups sugar peel of a lemon 1 spoon lemon juice ○ Preheat the oven to
360°F. Grease a large baking pan. ○ Beat the eggs, add the sugar and the vanilla extract powder. ○ Mix the semolina flour with the baking powder. Add it to the rest mixture. ○ Bake it to 360°F for about
40 minutes, until it becomes golden and doesn't stick to the knife. ○ In a saucepan, pour the ingredients for the syrup and stir them in a medium heat for about 20 minutes until the sugar is melted. ○ Pour slowly the hot syrup to the hot cake, allowing it to absorb every addition, and bake it to
320°F for 10 minutes.
