Menu Plan Monday 10/13

So, for the past few weeks we've given in to the temptation to eat out again. And I'm embarrassed to say, we've given in to that temptation more times then I want to admit! I was able to score some REALLY awesome Living Social coupons for more than 50% off our favorite local pizza place, but we've been eating out even more than that.
It really puzzled me because each week I scour the grocery ads and make a list of the best prices for the week on meat, produce, and non perishables. I use coupons every chance I can and I shop at Aldi's and another grocery outlet close to us that saves us a ton of money on things like snacks, drinks, and condiments.
I usually take what I can find on sale and create our dinner menu plan around the deals of the week. So where was I going wrong? I had a huge lightbulb moment on Friday. I'm not planning enough meals! With Paul now being so close to school, and doubling up his schedule at work only on the weekends, we're all home for most meals now during the week. I've been blowing through our meals that I've planned through Wednesday or Thursday and then I'm out of food besides lunchmeat and PB&J!
If you've followed me for a while, you'll remember that I used to plan for breakfasts and lunches as well - but it just wasn't necessary when we were all out of the house most of the week. I'm super happy to be back in the stage now where we're spending more meal together as a family - and really thankful to God for this precious time we have together.
So... starting this week I will be sharing with you what I'm planning for our lunches each day, as well as our weekly breakfasts (which for me is usually just coffee, haha). I can usually get some of our favorite quick, ready made foods cheap at my favorite grocery outlet, so I will be using some of those for lunches. I can't spend ALL my day in the kitchen, you know! :)
