The Classics #5 Homemade Bounty


Of all the recipes I’ve made as part of “The Classics” series so far, these are the most like their original. By that I mean they taste EXACTLY like shop bought Bounty’s (those of you in the U.S will know them as Mounds). I see this as a good thing - all the taste, none of the E numbers and other nasties they add to the real things - but some may think “what’s the point if they taste the same?” This is exactly what my friend Will would say, he sees baking as far too much effort to be worth while, but as I have tried to explain to him, it’s about the process of making them - the journey more than the destination if you will? For it is far more satisfying to eat something that you have made yourself than to just buy it off the shelf.

I’m not going to lie to you, making these gets a little messy. The coconut stage is a sticky one and prepare to get chocolate in places you never imagined possible whilst trying to coat the little suckers, but as I mentioned - totally worth it!

The recipe is adapted from Not Enough Cinnamon, I didn’t have enough coconut left in my packet to make it as Marie does so I used icing sugar to bind it into a thicker paste.

Makes 10-12

You will need:
200ml condensed milk
150g desiccated coconut
50g icing sugar
400g milk chocolate

Method:
1. In a large bowl, mix together the condensed milk, coconut and icing sugar to form a thick paste.
2. Shape the paste into small rectangle bars, pressing them together firmly in your hands. Lay out on a baking sheet lined with parchment paper.
3. Refrigerate the coconut bars for 1 hour or until dry on the outside and firm to the touch.
4. Break the chocolate into pieces and melt in the microwave or over a bain marie.
5. Dip the chilled coconut bars into the chocolate, coating them evenly, lay onto a wire rack to set.
