dinner in a pumpkin recipe


Sunday I put this picture up on Instagram and wrote about my favorite dinner of the entire year. A dinner that will warm your soul!! We call it “dinner in a pumpkin”. My sweet grandpa makes it every year and we only have it twice… One Sunday and then again on Halloween. It is absolutely amazing.

My grandpa is the sweetest most generous man in the entire universe. He is the most selfless man. He use to take dinner to all the widows in the ward every Sunday until my Grandma got sick. He plows driveways, builds houses, serves on city council, takes treats around, everything you can imagine! Last year he made and delivered 101 of these yummy pumpkins to neighbors, ward members, friends, and family. AMAZING right!? If you ever need some uplifting in your life, just hang out with Grandpa Pitcher for the day and you will be inspired to love more, care more, and serve more. He is the most amazing man I have ever met.

“dinner in a pumpkin”

1lb sausage cooked and drained
1/2 cup chopped onions
1/2 cup cut celery
3 cups water
1 package dry chicken noodle soup
2 cups of minute rice

Add to chopped onions and celery to sausage. Add water, dry chicken noodle soup mix (we use liptons) and Minute rice. Simmer for a few min. Add mixture to hollowed out sugar pumpkin and bake 2 1/2 to 3 hours at 275. We have cooked ours in ovens and this year he cooked them in the smoker! Can you say YUMM!!
