So, without further adieu, meet Jo-Lynne:

I’m so excited to be guest posting for Kristin and Megan today! I love to cook and experiment with recipes that delight my family, and with summer approaching I thought I’d try out a recipe with strawberries. I perused Pinterest for some inspiration and decided to try my hand at Fresh Strawberry Glazed Donuts.

I highly recommend purchasing a 6-count donut pan. It’s not a big investment, and it’s just fun to have. Donut recipes are abundant right now, and I guarantee your kids will LOVE them.

This recipe is great because the donut part is just a simple vanilla cake donut that you can use with ANY topping.

I used a fresh strawberry glaze to top these.

I know, you’re drooling already!

Trust me, these are truly easy to make. For the topping, you just puree fresh strawberries in a food processor or blender.

And then you blend it with powdered sugar to make a runny frosting consistency.

And dip the donuts in the glaze.

Let them set a few minutes and then devour!

Here’s the recipe:

Fresh Strawberry Glazed Donuts

Ingredients:

  • 1 cup all purpose flour
  • 3/4 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2/3 cup melted butter
  • 1/2 cup buttermilk
  • 2 large eggs, beaten
  • 1/2 teaspoon vanilla
  • 4-6 fresh strawberries
  • 1 – 2 cups powdered sugar

Instructions:

  1. Preheat oven to 350 degrees. Grease two 6-count donut pans with butter.
  2. Sift the flour, sugar, baking soda and salt in a mixing bowl.
  3. In a separate bowl, whisk together the butter, buttermilk, egg and vanilla. Add to dry ingredients and stir until just combined.
  4. Spoon batter evenly into donut pans – two or three tablespoons per donut.Bake for 11-14 minutes or until they bounce back at a light touch and are just beginning to brown.
  5. Allow the donuts to cool for 3-5 minutes and remove to a wire rack while you prepare the glaze.
  6. In a blender or food processor, puree the strawberries. Add powdered sugar by the half-cup until you get a the right consistency for a glaze. Pour the glaze into a shallow bowl.
  7. Dip each donut into the glaze and place on a rack to cool. Eat immediately.

Enjoy with a glass of cold milk or a cup of steaming hot coffee!!!

Now that you’re drooling, head on over to Musings of a Housewife for lots of food, fashion and family fun! And check out my guest post on DIY ikat Easter eggs.
