Grapefruit-Chipotle Margarita

Jeremiah Doherty, beverage director at Bar Amá, recommends that if you’re going to bother making
cocktails, you should go to a good spirits shop and spend some money on quality ingredients. When this
refreshing drink is shaken up at Bar Amá, they use Combier, which is a high-quality triple sec, or sweet
orange liqueur. If you can’t find it, Cointreau can be used instead.

Coarse salt for the glass rim

1 lime wedge

2 oz. (60 ml) tequila

1 oz. (30 ml) fresh grapefruit juice

1/2 oz. (15 ml) agave nectar

1/2 oz. (15 ml) Combier

Pinch of chipotle chile powder

Spread the salt on a small plate. Moisten the rim of a glass with the lime wedge, dip the edge of the rim into the salt and shake off any excess. Fill the glass with ice.

Add the tequila, grapefruit juice, agave nectar, Combier and chile powder to a cocktail shaker filled with ice. Shake vigorously, strain into the prepared glass and serve immediately. Makes 1 drink.
