Chicken with Tomatoes, Artichokes and Capers (plus The Wednesday Roundup)

Hi everyone. Yes, The Wednesday Roundup IS happening today. It just so happens that I double booked my blog today! Geesch, that makes me feel so disorganized popular. Okay, enough gushing over myself. Before we get to The Wednesday Roundup and all the amazing features you guys shared last week, I wanted to tell you about this ridiculously easy dish I’m sharing today over on The Best Blog Recipes; Chicken with Tomatoes, Artichokes and Capers.

Today is my last time sharing a recipe from Foody Schmoody…I’m JUST Cooking on The Best Blog Recipes. It has been fun being a contributor here on The Best Blog Recipes and I’ve enjoyed getting to know a few of you. So for my very last post here, I am sharing a dish that a family friend called “one of your best yet”, Chicken with Tomatoes, Artichokes and Capers.

The funniest part of receiving a major compliment on this dish, is that it wasn’t a planned dish. It was one of those “oh no, it’s 5 o’clock and I haven’t figured out dinner yet. What do I have? Oh, chicken looks good. Let’s raid the pantry and throw it all in a pan and hope for the best”. Don’t you love when that results in something awesome? I find myself making more and more of these kinds of “uh oh” dishes over the summer, while I’m so busy.
