Crock Pot Chicken Bacon Ranch Wraps

Recipe inspiration sometimes comes from strange places. This recipe for Crock Pot Chicken Bacon Ranch Wraps, oddly enough comes by way of pizza.

We sometimes order pizza from this place in our town that serves bar room style pizzas. You know, the small pizzas, that basically feed one person. They have tons of toppings and specialty pizzas. They do a buy 3 get 1 free deal, so we always get 4. My absolute favorite is the eggplant pizza. My husband, however, has to have, what they call The Dunne Special. It’s a white pizza with…..you got it, chicken and bacon. Ranch dressing serves as the “sauce” and I think they even serve ranch on the side.

It certainly isn’t the healthiest pizza around, but every now and then you just gotta have it!

I thought it would be fun to take the flavors that my husband loves and transform it into something new. I was originally going to serve it over rice, but once it came together, wraps or sandwiches made more sense to me.

I ‘m thinking this would be a great back to school recipe. If your kids are anything like our oldest, the second they get in, they want something to eat. A small snack doesn’t cut it. She wants substance. She rarely eats lunch at school, because their lunch time is at 10:30 or something ridiculous like that. Anyway, this is a good one that you can have cooking while the kids are at school and then let them make a wrap when they get home.

Or just make them wait until dinner and serve it with a salad and you’ve got yourself a meal.

Crock Pot Chicken Bacon Ranch Wraps

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 C chicken broth
  • 1 envelope, dry ranch dressing
  • 1 red onion, diced
  • 6 slices bacon, cooked and chopped into bite sized pieces
  • 1 C shredded Monterey jack cheese
  • Salt and pepper to taste
  • 8 flour tortillas

Instructions

  1. Line your crock pot with a cooking liner or spray with non stick spray.
  2. Place the chicken, onions and broth in the crock pot and then sprinkle the ranch seasoning over it all. Cover and cook on low 4 hours.
  3. After 4 hours, remove chicken from crock pot and shred. Pour most of liquid out of crockpot, reserving about 1/4 C. Add chicken back in and add ranch dressing and cheese. Stir together well and season with salt and pepper. Re-cover and cook an additional 30 minutes on low to allow flavors to meld.
  4. Stir bacon in when finished cooking.
  5. Wrap mixture in tortillas and enjoy.
  6. Optional: Toast wrap in oven or buttered skillet.
