Slow Cooker Chipotle Chicken Chowder

I’m so glad that spring is officially here. However, we’re still having some chilly days and even the occasional snow shower here in Colorado, which means soup is still making an appearance on the menu. This Slow Cooker Chipotle Chicken Chowder is a smoky, slightly spicy version of a classic chicken chowder, and my family loved it. Everyone emptied their bowls–my husband emptied his three times!

My kids all tolerate spicy foods quite well, but if you’re concerned about the spice level, start with half a chipotle pepper and go from there. You can always add more, even just before serving. This is a pretty basic recipe, but it’s fabulous with additions like corn or black beans. Since I can’t get unanimous support for either of those ingredients from my family, I usually stick with the chicken and potatoes, but don’t be afraid to experiment!
