RECIPE: MEXICAN PASTA SALAD

I’m so exited to share this recipe with you, since it is actually the first recipe that I have ever shared on my blog. I love this pasta salad because you can cook it in less than 20 minutes. So, it’s perfect for those with a busy schedule. Also, it has a Hispanic twist to the traditional italian pasta, which I love.

To make the pasta you will need:

-Barilla Farfalle pasta (my favorite)
-2-3 medium tomatoes, seeded and diced
-1 1/2 cups fresh tomato sauce
-3-4 tbsp lime juice
-freshly ground salt & pepper, to taste
-1/2 cup chopped fresh cilantro
-1 large avocado, diced
-2 corns
-2 small bell green peepers
-1 small onion, diced

I found the Barilla Farfalle pasta in Waltmart. For the rest of the ingredients I went to my local farmers market.

Directions:
1. Cook the pasta al dente according to package instructions. Drain, rinse with cold water, and set aside.
2. In a large bowl, combine the corn, tomatoes, salsa and lime juice. Once pasta is cooled, stir in and mix to combine.
3. Stir in cilantro and season to taste with salt and pepper. Just before serving, dice the avocado and carefully stir into salad.

Voila! Lunch is ready.
