Cookies and Cream cake -Oreo and White Cake and Happiness

The best thing to happen to a hostess is to cook a meal so well that there are no leftovers.
Sad ,for those of us who love to have reheated leftovers for breakfast or a midnight meal.

But when meals end way past midnight and the ghouls and evil spirits are at their prime (as coached by the Paranormal Activity series -their time is 3 am ) there remains no scope for a midnight snack.
OK ,there were no leftovers either.

Before my impending old age fogs up my brain...I must post this Cookies and Cream cake -Oreo and White Cake .
This was a special for friends who are moving to a coveted place , Jodhpur...
Yes ,hubby dear was amazingly green eyed when he came to know they are heading where his heart lies...
Solace, we'll have a place to crash on our next trip to Jodhpur,Rajasthan.
Yes, its on the agenda...

The little lady is nicknamed Jadoo ...magic and this was for her. A total sweetie, gentle, well behaved and all that .We have a soft corner for little angels...

Oreo in every bite and some more.

A white cake to die for and a frosting that is light and speckled with Oreo cookies.

Cookies and Cream Cake -The Best ever White Cake with Oreo Cookies

You need

1 1/2 cup All purpose Flour or maida
1 tsp baking powder
2 eggs plus 2 egg whites
1/2 cup whole milk plus 1 tsp vinegar for the butter milk
1 1/2 cup sugar
1/2 cup vegetable oil
1/4 cup vegetable shortening or dalda or clarified butter or ghee
1 tsp vanilla essence
pinch salt
1 cup crushed oreos

Grease and flour an 8 or 9 inch cake tin and pre heat oven to 180°C. Sift the flour and baking powder and salt twice and set aside.
Start with the two fats - the oil and the dalda or shortening. Whisk in the sugar with an electric blender.

Beat in one egg at a time and then the egg whites.

Add the vinegar to the milk and set aside. Sift the flour mix into the egg and sugar and fat mix half cup at a time.Start withe the dry and end with the dry - so three batches....
Whisk in and add some of the butter milk to help blend in. In the end ,add the vanilla- My coffers ran dry so I added a spoon full of whiskey-"Blenders Pride" with my fingers crossed lest it become "Blunders Pride"-but thank fully it did not.
Fold in the crushed Oreos cookies and pour into the ready tin.
Bake for about 35 minutes
You'll know its done when its gets an awesome colour . Test with a knife if in doubt.
Cool an remove from the tin in about 20 minutes.
I fell asleep-thanks to the School Cross Country Race we had to chaperon at 5 30 am on a cold wintery day...That definitely deserves a new blog post...and could only demould it after a couple of hours.

Split in the middle and now you are ready for the Jadoo...The actual Cookies and Cream Cake.
you need

4 cups whipped cream-I use non dairy cream whipped to stiff peaks.
1 cup almost powdered Oreo Cookies
10 Oreo Cookies halved or mini Oreos if you have access to them
Colourful sprinkles to complete the look.
1/4 cup cold milk

Once the cake is cooled, split it in the middle and observe how white the cake is and how beautifully the Crushed Oreo Cookies contrast. They are now twice baked, softened and yummier.
Place the top half on the serving platter .
Pour a little milk on both halves to moisten the cake a wee bit.

In a bowl remove about a cup of the whipped cream and mix in the powdered Oreo Cookies, you may need to add a spoon full of milk. Mix well.
Spread the entire mix on the bottom layer and top with the second half of the cake.

Crumb are ready to finally frost.
Neaten the edges and add some rosettes on top and place the halved Oreo Cookies like so...
Slice the cake and enjoy. OK, the sprinkles, because sweet child wanted to try to smoothen an already smooth top...

After a meal of Spicy Mutton Curry ,this was cool and sweet and uncomplicated and had just enough of vanilla and chocolate to not over power the palette.

Empty platter...
Forgive the photographs...
Tired woman here.
Next time round there will be more.
Cake and all.
It doesnt have to dessert, enjoy with a cup of coffee or with friends...

Book mark this Cookies and Cream cake -Oreo and White Cake and try it. Happiness guaranteed.
