The Best (and Easiest) Breakfast Potatoes

Goooooood morning!

At the start of every week, I make a big batch of breakfast potatoes for Mal and me. They’re great as a quick meal, especially along side some eggs at breakfast or mixed into a simple meat veggie bowl at lunch or dinner. (I just reheat them in the microwave or toaster oven.) They have soooo much flavor (thanks to some Montreal Steak Seasoning) and they’re a nutritious addition to just about any meal. But the best part about these potatoes (besides how delicious they taste, obviously) is how easy they are to make. Check out my simple recipe below!

Preheat oven to 400 degrees F.

Chop potatoes into 1-inch-ish pieces and place in a large mixing bowl.

Drizzle olive oil over potatoes and mix well. (The potatoes should be well-coated with olive oil, so feel free to add more oil if needed.) Then, shake Montreal Steak Seasoning all over the potatoes—add as much or as little as you’d like. I love the stuff, so I go crazy with it!

Spray a baking sheet with non-stick cooking spray and then pour potatoes onto it and spread them evenly.

Bake potatoes for 20-25 minutes, tossing after 10 minutes or so. After 20-25 minute, turn the oven up to broil and then cook for another 5-7 minutes or until potatoes are crispy on the edges.

Remove potatoes from the oven, allow them to cool slightly, and enjoy! Potatoes can be stored in an air-tight container in the refrigerator for 5-ish days. Just reheat in the microwave or toaster oven!
