Touchdown Truffles

I try to keep everything on the blog authentic & natural of how we celebrate everyday life, but sometimes I have an idea I just can’t help but create & share! Last Thursday, we took a day trip to Grafton, Illinois to go eagle watching. It led us to this little restaurant that I recalled from my childhood that had a few large fishtanks that you dined next to. I was excited to take the girls there, but after just a few bites of our salads Chris & I decided it was best if we just skipped lunch. In lieu of lunch, we stopped by a darling little bakery in downtown Alton, Illinois where we enjoyed some phenomenal peanut butter truffles. They were so creamy & had just the right peanut butter to chocolate ratio. Then it hit me – these little truffles would be adorable in the shapes of footballs & despite that I was going to create them for the blog, my family would never argue with me whipping up these delectable bite sized treats.


Touchdown Truffles

Ingredients
  • 1 c creamy peanut butter
  • 5 Tbsp butter, melted
  • 1 Tbsp heavy cream
  • 1 Tbsp vanilla
  • 1½ c powdered sugar
  • 1 c milk chocolate chips or Baker's melting chocolate

Instructions
  1. Combine peanut butter, butter, cream, & vanilla. Blend until smooth.
  2. Add powdered sugar & blend until completely creamy.
  3. Refrigerate dough 1 hours.
  4. Roll 1" dough balls between your hands & roll it like dough on the two sides to form football shapes.
  5. Melt your chocolate according to instructions & dip, allowing excess to drip before placing them on parchment paper.
  6. Refrigerate to set.
  7. Using a small tube of icing {not in a can, air bubbles can be an issue}, add lines to create footballs.

These peanut butter truffles are a TOUCHDOWN! They didn’t last long at all. In fact, Chris & Adalyn were watching over me just hoping I’d mess up & pass them one sooner.
