Hi everyone,
You may have seen my post last week on my pregnancy diet restrictions and what delicious recipes I had found. I think I’m going to post them once a week, for those of you who also have diet restrictions or are just trying to eat clean and healthy. I’ll tell you what I thought and what the kids thought.
Luckily, I was able to handle a little regular sour cream this week. These recipes are still no-dairy, but it was nice to be able to add a little of that.
So here are this week’s recipes. If you’re Paleo, Alkaline, Gluten-Free, Sugar-Free, Dairy-Free or just really into clean eating, then these might work for you.
1. Key-Lime Coconut Vegan Raw Cheesecake Cups – These were seriously SO GOOD! They didn’t taste like a “special recipe”. They tasted like a dessert you would have at a friend’s house, or something you would have at a party . Really SO GOOD!
2. Three Bean Vegan Chili – This was really good too. Not “I was shocked good”, but really good. I made a huge pot of it on Sunday and ate it for dinner almost every night. I would put fresh tomatoes from my garden, banana peppers, and avocado on top with just a little bit of sour cream. Last night I put it over sweet potatoes. Yumm!
3. Roasted Butternut Squash with Kale and Almond Pecan Parmesan – This was ok. Decent, but not my favorite. My husband really liked it. I wouldn’t make it again.
4. Orange Carrot Ginger Juice — If you had a juicer this would be really good! I just have a blender, so I halved the recipe and blended it. The flavor was good, but the texture needed to be thinned out.
5. Spring Rolls with Spicy Peanut Sauce — These were good. The stuffing for the spring roll a was really good mix, but I liked the ones I made last week better.
6. Lemon Meltaway Balls (raw and vegan, sugar-free, gluten-free) — These were really good too! These sugar free desserts have surprised me!
I am still eating my Chia Breakfast Porridge every morning. I still love it! I also found Trader Joe’s Kale Chips this week and may have eaten two bags of them… Yumm! (Although my kids think they are awful)
Even though I probably had better recipes last week, these were pretty good and overall I’m still really impressed with how good gluten/dairy/sugar free recipes have been!
