tropical green smoothie


For a long time I was scared of green smoothies. Why would I want my delicious brightly coloured fruit filled smoothies to turn green, or sometimes an un-appetising shade of brown and taste of plants? I know, it sounds ridiculous but I bet many of you feel the same. Smoothies are for fruit, not vegetables.

Or so I thought.

This was until the day I discovered a bag of kale, with that days use by date on it, lurking in the back of my fridge and I got brave. I took a handful, put it in my Kenwood Smoothie 2 Go, threw in some of my favourite fruits, pressed the on switch, closed my eyes and hoped for the best. And do you know what? It turned the prettiest shade of green and was maybe even tastier than my usual fruit smoothies.

Oh, and it even got bonus points for not tasting of plant. Infact if it wasn't for the colour I would never guess there was a big fat handful of veg in there. The smoothie is deliciously creamy, with a tropical taste that would fool anyone. And here's how I made it…

INGREDIENTS
Makes one large glass - ideal for breakfast on the move!

A handful of fresh kale
A banana
A 2cm thick slice of pineapple
Approximately 100ml Alpro coconut milk

METHOD
I don't think making a smoothie takes much explaining, it's simply a case of chucking all your ingredients in, whizzing until smooth and topping up with a little more coconut milk until you reach your desired consistency before garnishing with a little desiccated coconut to make it look a bit fancy.
