Hey YA! Welcome to my castle! How’s it going?

So far this week, and it’s only Tuesday, I’ve dropped 300 buckaroos at Target, another 100 at Macy’s (how did I spend more at Target than at Macy’s?!?), AND 60 bucks at Toys R Us. In.Sane! Don’t forget the 45$ at Walgreens for a new lip gloss that I’ll never wear and on a few bags of those Probiotic Nuts/Chocolate Mixes. I’m addicted to them.

Thank goodness Steak and Potatoes are still on the side of cheap.

I feel like all I ever show you is skillet this and skillet that… You’re welcome???
BUT I made an amazing sauce to go with this one! I took all the citrus fruits that were in my fruit bowl and whisked them around with a splash of soy sauce and a spice or two. It was so good! Wanna know how good? SO GOOD that if I saw it on Facebook, I’d “Friend it”. And give it a “Like” every time I saw it.

You know how everyone is making corned beef hash at this present moment? Yeah. They are.
So. I’m not into corned beef. Maybe it’s cause I’m nowhere near an Irish bloodline?! However, I am very into the whole hash thing! POTATO Hash, that is! Wouldn’t want anyone to get the wrong idea.

Thus, instead of the whole corned beef-hash thing, I made you a steak-hash thing! Call me shortcut-Kat, but this skillet dinner is about to change your hash! I don’t even have to tell you how brilliant this is for a delicious weeknight meal, either. I mean, you can do it all in the same skillet OR you can use two of them at the same time to speed up the process. Easy peasy.

The only thing that is going to annoy you is the chopping and slicing. Prep time borders around 12 minutes. Blah. It’s worth it, though!

This easy skillet recipe involves tender strips of sirloin steak and cubed potatoes tossed with colorful veggies and Citrus Soy Sauce.

Ingredients FOR THE STEAK AND POTATOES
  • 3 tablespoons olive oil, divided
  • 1 large yellow onion, sliced
  • salt and fresh ground pepper, to taste
  • 3 garlic cloves, chopped
  • 8-ounces sliced mushrooms
  • 1-pound sirloin steak, cut into 4-inch long strips
  • ⅓-cup water
  • 6 yukon gold potatoes, cut into cubes
  • 4 large carrots, cut into rough chunks
  • salt and fresh ground pepper, to taste
FOR THE SAUCE
  • juice of 1 lemon
  • juice of 1 lime
  • 3 tablespoons fresh orange juice
  • 1 teaspoon chili powder, or to taste
  • 1 tablespoon dried oregano leaves
  • ½ tablespoon ground cumin, or to taste
  • 3 tablespoons lite, low sodium soy sauce
  • fresh chopped parsley, for garnish.

Instructions
  1. In a large skillet heat 2 tablespoons olive oil.
  2. Add onions and season with salt and pepper; cook over medium-high heat, stirring frequently, for 1 to 2 minutes, or until they begin to soften.
  3. Add garlic and cook for 30 seconds.
  4. Stir in mushrooms and continue to cook for 3 minutes, or until veggies are tender.
  5. Remove onion mixture from skillet.
  6. Return skillet to heat and add remaining olive oil.
  7. Add steak strips and cook until browned on all sides; about 2 minutes.
  8. Remove steak strips from skillet.
  9. Add water to the skillet and stir in potatoes and carrots.
  10. Season with salt and pepper.
  11. Bring to a boil.
  12. Reduce to a simmer, cover skillet with a lid and let cook for 12 to 15 minutes, or until vegetables are tender.
In the meantime prepare the sauce.
  1. Combine all ingredients in a small mixing bowl and whisk until thoroughly combined.
  2. Remove lid from skillet.
  3. Add in steak and onion mixture.
  4. Stir in the prepared sauce and continue to cook for 4 minutes, or until heated through.
  5. Remove from heat.
  6. Garnish with fresh parsley and serve.
