For under 300 calories, this satisfying breakfast smoothie offers less than half the sugar and 18 times the amount of protein found in two tiny cookies! Toasting your shredded coconut takes a few minutes, but this extra step is absolutely worth the effort.

Samoa Cookie Smoothie


Ingredients

1/4 cup unsweetened shredded coconut
3/4 cup light coconut milk
1/2 cup low-fat cottage cheese
1/2 teaspoon vanilla or caramel extract
1 teaspoon maple syrup
6 ice cubes
Pinch of cacao nibs, optional garnish

Directions


  1. In a small skillet over medium-low heat, toast your shredded coconut. Stir frequently for about 3 minutes, making sure none of the coconut burns. Once the edges are a nice golden color, remove from heat, and divide in half.
  2. Combine half of the toasted coconut, coconut milk, cottage cheese, vanilla extract, maple syrup, and ice in a blender. Blend until smooth.
  3. Top off your smoothie with the rest of the toasted coconut and a sprinkle of the cacao nibs (optional).
  4. Sip and enjoy!
