It is hard to believe another year is almost over. A big, hearty thank you to everyone who has supported Food Done Light. All of your comments and sharing on social media is very much appreciated. We are taking a look back at the most popular savory recipes of 2014. I see some trends. Soup was hot. (Pun intended!) Slow cooker recipes are always in need, and carrot cake anything is a hit. Next year, look for more slow cooker recipes, and I plan on starting the year with some slimmed down comfort food. I hope you will join me. I am also starting the Healthy Challenge. Print Cranberry Pistachio Bread {Low Fat, Vegetarian}

Serves: 12
Ingredients
  • 1⅓ cups (160 grams) all-purpose, unbleached flour
  • 1 cup (120 grams) whole wheat pastry flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • 1 tsp. kosher salt
  • ½ tsp. ground cinnamon
  • ⅔ cup granulated sugar
  • ⅓ cup orange juice
  • 1 cup plain 2% fat Greek yogurt
  • 2 eggs (You can use ½ cup egg substitute instead)
  • 1 tsp. vanilla extract
  • 1 cup fresh cranberries, or frozen that have been thawed
  • ½ cup chopped pistachios
  • 1 ½ tbsp. orange zest

Instructions
  1. Preheat oven to 350°. Spray a 9 x 5 x 3 inch loaf pan with baking spray.
  2. In a large bowl, whisk together all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and cinnamon. Place aside 1 tbsp.
  3. In a medium bowl, whisk together the sugar, orange juice, yogurt, eggs, and vanilla.
  4. Add wet ingredients to dry ingredients and stir until just combined.
  5. In a small bowl, gently stir cranberries, pistachios and orange zest with 1 tbsp. of flour mixture.
  6. Fold into the batter.
  7. Pour into the loaf pan and bake for 1 hour to 1 hour 15 minutes.
  8. Let cool for 5 minutes.
  9. Carefully take bread out of pan and place on wire rack.
  10. Cool completely.
