Asian Cucumber and Carrot Slaw

I made an Asian inspired meal this evening for dinner. I served lettuce wraps and paired them with this tasty slaw that I found on Kitchen Confidante. This Asian salad is quick to throw together, beautiful to look at, and tastes so delicious. We all loved the crisp veggie “noodles”with the tangy dressing This slaw is fun to eat, healthy, and delicious – you can’t beat that!

Use a julienne peeler or grater to shred the cucumber and carrots into long strips.

Toss the vegetables in a medium bowl, along with both vinegars, water, sugar, and sesame oil. Toss to coat evenly. Garnish with sesame seeds and cilantro. Chill until ready to serve. Best served cold. Enjoy.

Asian Cucumber and Carrot Slaw

Total Time: 10 minutes

Ingredients:

1 large English cucumber
2 medium carrots, peeled
2 tbsp rice vinegar
1 tbsp cider vinegar
1 tsp water
1/2 tsp sugar
1/2 tsp sesame oil
2 tsp sesame seeds
1/4 cup chopped cilantro

Directions:
