Chicken Caesar Salad

Hello everyone, well its been a while since I posted a recipe on the blog. It’s not that I haven’t been cooking but sometimes I totally forget to take photos because I am in too much of a rush to eat! Well last night I made one of my favourite dishes that I make all the time and I thought this is so good I must remember to share it. So here is my Chicken Caesar Salad!

Ingredients:

  • 1 large chicken breast (chopped into bite size pieces)
  • 1 cup bacon pieces
  • Cajun Seasoning
  • 1 small iceberg lettuce
  • 1 avocado
  • Handful of cherry tomatoes (sliced into halves)
  • 1/4 cup shredded parmesan cheese
  • 1/2 loaf ciabatta bread (thinly sliced)
  • Newman’s Own Creamy Caesar Dressing
  • Olive oil

Firstly start with shredding up the washed lettuce into a serving bowl, next add the tomatoes, avocado and parmesan cheese.

Heat a frypan over a high heat and add a splash of olive oil, then cook the bacon pieces until they are nice and crispy. Set them aside on some paper towel to drain and soak up any excess oil.

Bring the frypan back up to the heat and add the chopped chicken breast which is coated in a good sprinkling of Cajun seasoning. Cook for about 5 minutes on each side until the skin is golden and crispy and the chicken is cooked right through. Allow to rest for a few minutes.

Place the chicken and bacon on top of the salad and then drizzle over Newman’s Own Creamy Caesar Dressing. Season with a pinch of salt and pepper.

Coat the ciabatta in a light spray of olive oil and pop under the grill to just slightly brown the bread. Serve on the side with the salad.

Optional extras are placing a poached egg on top of the salad or adding thinly sliced red onion!
