BHG Oatmeal Peanut Cookies, My Way



So I got this bad boy ^^^^ for Christmas and I thought it was about darn time that I crack it open, Literally. I had yet to take it out of the cellophane wrapper. Bad baker bad!
Does this look familiar to any ofs ya? I grew up looking up recipes in the Better Homes and Gardens Cookbook helping my mama out in the kitchen. It had a real plaid fabric cover barely visible beneath all the sticky finger marks... I'm not sure what edition it is... an oldie but goodie for sure. This is the 15th edition. The 'New' Cookbook. I feel that getting this cookbook is kinda a rite of passage to all the ladies of the house, as antiquated as that sounds. But it really is a total life saver. Full of substitutes and ways to make the recipes your own. That's one thing I'm not fond of with new recipe books... most are pretty strict on what and how much to use. I'm kinda a fly by the seat of my pants gal, so in the kitchen I need recipes that can handle a substitute or two (or three or four). I mean, really, who has ALL of those things on hand ALL the time. Definitely not moi!
So I'm starting with the hardest recipe of all. Even the most highly trained french chefs are yet to master.... The oatmeal cookie. Yeah right. It's like impossible to wreak an oatmeal cookie. Well, actually that's a lie. I've totally bombed at making them, especially when you accidentally dump the box of baking soda into the batter and desperately try to salvage it. Let me tll ya, those were the most AWFUL tasting things ever. You expect a mouthful of brown sugary oatmeal yummy and instead get a gullet of bitter yuck. Blech.
Ok. Onto the BHG oatmeal cookie recipe. Here it is. Literally a page full of suggested substitutes just for a single cookie!

And here is what I came up with
Ingredients:
One cup butter
1 1/2 cups brown sugar
3 cups quick oats
2 eggs
1 teaspoon vanilla
1 1/2 cups flour
1 1/2 cups roasted peanuts
1 cup peanut butter
1/4 cup Hersey's syrup (just because... why not?)
1/2 teaspoon salt
1 teaspoon baking soda

Instead of putting these on a cookie sheet, I butters down some cupcake pans and filled them almost to the top with the batter and slightly pressed down. Bake at 350 for 12-15 minutes

And of course you need lots and lots of help in the kitchen. Leaving sticky fingerprints. ALL. over. the. place....



A yummy sweet treat that isn't all that hard on the diet. I just tell my self it's just like having my normal bite of plain oatmeal in the morning. Yeah. Right. Just like plain oatmeal.... we'll just ignore the butter... and the peanut butter... and the sugar.... oh and the chocolate sauce....
