If I asked you to name one food that is synonymous with Mexican cuisine, what would it be? Would you say this part of the pig or maybe this part? For me, it would have to be Tacos. Make that Tacos Dorados*.

They’re one of my favourites because they’re prepared fresh, loaded with vegetables and only take about 15 minutes to prepare, cook and serve. Having said that, I’ve never had them in Canada because I couldn’t find corn tortillas. That is until I recently discovered Dempsters Corn Tortillas!

Authentic Mexican Tacos Dorados Recipe**

Authentic Mexican Tacos Dorados

Prep Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes

Feeds 4. 1.5 Tortillas per Person

Ingredients

  • 6 Dempsters Soft Corn Tortillas
  • 1 400g can of Refried beans (or make your own)
  • 1 220g of canned salsa (or make your own)
  • 2 small cooked beets (grated)
  • 2 medium carrots (grated)
  • 4 medium plum tomatoes (finely chopped)
  • 2 cups of grated (or finely sliced) cabbage or lettuce (or both!)
  • Crema or Doble crema cheese (Mexican) or Feta cheese (Optional)
  • Canola oil (or other oil)

Instructions

  1. Briefly warm tortillas in the microwave or leave out on counter (if not already soft).
  2. Place 4 Tbsps (or 1/6 of the can) of refried beans along the centre of each taco and roll. Pin with a toothpick if it doesn't stay closed.
  3. Put about 1/2 inch of canola oil (or your preference) into a large frying pan (or fryer) and turn to high.
  4. When the oil starts to bubble, put all the tacos into the frying pan and turn down to medium.
  5. Turn the tacos 2 - 3 times ensuring it is fried all around. Approximately 5 minutes.
  6. Let drain on paper towel.
  7. Cut in half and serve 3 halves per Person.
  8. Garnish with salsa, carrots, cabbage, lettuce, tomatoes and cheese.
  9. Serve immediately.

Notes

Note that I'm currently in Mexico so I had to use local tortillas which are about half the size of Dempsters Corn Tortillas. This recipe has been adjusted for you.

Put salsa (and cheese if available) on the taco first to "moisten" it.

Refried beans can be replaced with plain boiled potatoes that have been mashed.
