Sunday Food Prep Inspiration 93

Hi Friends!

Time for another round of Sunday Food Prep. I missed out last weekend because I wasn’t feeling well…but luckily I have a few submissions from my wonderful readers to inspire you!

I prepped spaghetti, heirloom tomato and arugula pasta sauce, salmon salad, and hardboiled eggs. I also chopped scallions, portabella mushrooms, and a jar of artichoke hearts, and put two cans of Rotel tomatoes/green chiliies in a container for the fridge. I am super lazy in the morning before work, so if something is already out of the can and has to be used by the end of the week, I am far more likely to use it! I add the Rotel to eggs, and the rest of my chopped ingredients go into salads or are quickly sauteed. The salmon salad is my mom’s recipe (add curry powder!) and it’s fantastic on greens or bread. In addition, I’ve got microwaveable quinoa/brown rice packets and vegetable medleys.

So, I rarely doing a weekend food prep (tho I really should get into the habit) but I just kind of fell into it this morning prepping all kinds of veggies including: Roasted & pureed butternut squash for Butternut Squash Fettuccine Alfredo Roasted broccoli for Cheesy Broccoli & Greens Soup (how I get my greens in all winter long) Roasted carrots for Roasted Carrots (& Parsnips) with Cilantro Salsa Sautéed thyme mushrooms and sautéed broccoli rabe to mix into rice/pasta/farro

1. Whole wheat chocolate chip pancakes for my boys, ages 6 and 11. 2. Spinach lasagna for meatless Monday (plus one to deliver to a friend who recently had surgery) 3. Hummus 4. Shredded chicken for enchiladas later in the week 5. Washed and chopped salad greens 5. Double batch of granola
