Happy day! It is in the single digits here with a severe wind chill advisory. So. Running outside still isn’t a possibility right now; but running on the treadmill finally is! We were able to maneuver out of the ice and leave our house for the first time in three days.

Technically I guess Anthony and I left the house yesterday — for a short little walk in the neighborhood. It was freaking freezing.
Anyways — back to that run! I usually hate the treadmill, but in times like these I am so grateful for its existence. After being cooped up for so long, I ran my heart out. And I wore a tank top in protest of winter.
1 mile @ 8:40; 2 miles @ 6:55; 1.5 miles @ 6:44; 1.5 miles @ 8:25. So happy to move my legs again!!
In other news: We’ve been hosting my parents for the past couple days! Since the events they were in town for got canceled due to snow, we decided to have our own event last night: Tortilla chip taste-off.
The contenders: Late July vs. Food Should Taste Good. My mom and I are both suckers for BOGO deals, so we had four bags on hand…

The unanimous winner: Food Should Taste Good multigrain! It had just enough flavor and enough crunch. Everyone except my dad also agreed that the bacon habanero chip was just weird.

But they all tasted great when dunked in chili and washed down with beer

Our food supplies were pretty low yesterday — the only vegetables I had on hand were some peppers and an onion! I dug up some ground sirloin from my freezer and beans from my pantry… and boom. Chili was born.
I’ve been making this recipe for years and loosely jotted down the recipe here and here. But it’s time to make it formal. So, here you go!

Simple Beef Sirloin Chili (makes 4-6 servings)

  • 1/2 tablespoon olive oil
  • 1 onion, chopped
  • 2 bell peppers (any color), chopped
  • 2 cloves garlic, diced
  • 1 – 1.5 pounds ground beef (sirloin is tastiest!)
  • 2 cans beans (I prefer hot chili beans), drained
  • 2 cans diced tomatoes, drained
  • 1 can tomato soup
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1 teaspoon chili in adobo sauce or 1/2 teaspoon cayenne pepper
  • pinch of cinnamon
  • pinch of paprika
  • 1/2 teaspoon salt (or more to taste)
  • 1/2 teaspoon pepper
  • Toppings: Greek yogurt, avocado, shredded cheese, cilantro, green onions, chips!

Directions: In a large pot, saute onions, bell peppers, and garlic in olive oil on medium-high heat. Add meat and cook until meat is just barely browned. Add remaining ingredients and simmer on medium/low for 45 minutes to two (or more!) hours. Top with toppings. The end.
