Bar 70: White Chocolate and Walnut Bars



So, my bestie Erika always says the Vanilla Bean Noel Bundt Cake is her favorite of the 100...and it's the one she makes over and over again. Well, after having this little bar here, she had two things to say...first, she doesn't even like walnuts but second, this bar to her is the equivalent of the Vanilla Bean Noel Bundt Cake. It's that good.

Vanilla bar. Little bits of white chocolate and walnut running through. Cream cheese frosting.

The perfect bar that you'll probably make over and over again.


Shopping List
1 box of white cake mix
1/2 cup vegetable oil
2 eggs
1 (14 oz) can sweetened condensed milk
1 cup walnut pieces
1 cup white chocolate chips
1 (8 oz) package cream cheese, softened
2 cups powdered sugar
a splash or two of milk



Preheat oven to 350 degrees.

Grease (I use Pam) a 9x13 baking dish. Set aside.

In a large mixing bowl, combine the cake mix, vegetable oil and eggs with an electric mixer. Spread half of the mixture across the bottom of your prepared baking dish.

In a small bowl, combine the sweetened condensed milk, walnut pieces and white chocolate chips with a spoon. Pour this mixture down in the baking dish and spread to cover the first layer.

Take the remaining half of your batter and lightly dot it around the top of your baking dish (it won't spread across the top, just drop tablespoon amounts down across the top).

Bake 28 to 30 minutes or until a toothpick inserted in the middle comes out mostly clean and the bars aren't too wobbly in the middle (do not over-cook).

Remove from oven and allow bars to completely cool before frosting.

To make the frosting, beat with an electric mixer the cream cheese and powdered sugar together. Beat in a splash of milk. If the frosting is too thin, add more powdered sugar or if it's too thick, add more milk.

Spread frosting over cooled bars. Slice and serve or store in the fridge until you're ready to serve.
