Dinner Tonight: Greek Tacos



Hello Greek Tacos.
We're big ground turkey fans at our house...so one night, I decided to put a spin on classic ground turkey tacos and make them a little Greek. And let me tell you, they're so simple and fresh! There is hummus inside...hummus...in a taco...and it's so good!
Grab some turkey, a little hummus, fresh veggies and feta and make your own Greek Taco night. You will love it!

This recipe makes about 6 tacos.

Shopping List 6 crunchy taco shells 1 pound ground turkey 1 teaspoon oregano 1 (10 oz) box of frozen spinach, thawed and all of the excess water squeezed out about a tablespoon or so of hummus per taco 1 red onion, chopped 1 small cucumber, chopped a handful of cherry tomatoes, halved a few chopped olives, optional about half a cup of fresh Feta, crumbled Extra Virgin Olive Oil (EVOO) Salt and Pepper

Preheat oven to 350 degrees.
Place the taco shells on a baking sheet and lightly toast them about 4 minutes. They burn quickly, so just lightly toast. Remove from oven and set aside.
Meanwhile, in a large skillet over medium-high heat, drizzle in a tablespoon of EVOO and add in your ground turkey. Cook turkey until lightly brown and crumbly then add in your oregano and frozen spinach. Reduce heat to low and heat the spinach a few minutes.
Remove from heat and begin assembling your tacos. Take each shell and spread hummus across the bottom. Next, add in your turkey and spinach mixture. Top each taco with the onion, cucumber, tomatoes and/or olives. Garnish each taco with a little fresh feta.
So easy!
