Crockpot Mint Chocolate Chip Cake


A warm cake mix creation with mint chips straight from your slow cooker! Don't forget to top it with some mint chocolate chip ice cream!



I honestly can't believe it's that time of year already! Getting out the Christmas decorations, shopping for presents, finding my favorite wrapping paper... what? I'm obsessed with nice wrapping paper. I know some people like the glittery, shiny wrapping paper with the cartoon Santa's and reindeer. Nope, not me. I really, REALLY like the printed brown kraft wrapping paper that's super popular right now.

I remember my mom using brown kraft paper and plaid ribbon for Christmas one year and it stuck with me. So a few years ago (I guess I was a few years ahead of the trend, for once) it was Silas' first Christmas and I wanted that perfect look underneath the tree! I was feeling extremely nostalgic and I just had a picture in my mind of how I wanted that tree to look with all the "brown paper packages" wrapped up underneath on Christmas morning. Unfortunately at the time, the only thing I could find was real brown kraft paper, the heavy duty kind you wrap boxes in to be sent across country. It was actually TONS cheaper than regular wrapping paper so I thought I was really lucky!

Fast forward to Christmas morning, remember this was Silas' FIRST Christmas morning. Probably the second perfect picture I wanted in my mind (you know, besides the beautiful Christmas morning one with all the presents neatly wrapped) was of Silas ripping open his first presents. He was born that previous February, so at 10 months old he was MORE than capable of tearing open his presents.

Well, the wrapping paper was SO heavy duty - he couldn't rip anything open! I actually had a hard time "ripping" the paper and wound up unfolding the paper off of all the presents so he could see what was underneath. Oh well, I had the "perfect tree" look going for me at least. Sigh.




This Mint Chocolate Chip Cake is the perfect dessert to have warming in the Crockpot while you decorate the tree or wrap presents. I really love mint during the Christmas season - it's such a refreshing flavor among all the heavy, indulgent desserts this time of year. I used these amazing new mint flavored Nestle® Toll House®​ Delightfulls™ Filled Baking Morsels - they are slightly larger chocolate chips with a ribbon of yummy mint filling! They are absolutely perfect studded throughout this hot chocolate dessert.





Crockpot Mint Chocolate Chip Cake
Recipe by Kelly Miller A warm cake mix creation with mint chips straight from your slow cooker! Prep time: 5 minutes
Cook time: 3 hours
Total time: 3 hours 5 minutes

Ingredients
  • 15 oz box chocolate cake mix
  • 3.9 oz box instant chocolate pudding mix
  • 3 eggs, beaten
  • 3/4 cup oil
  • 1 cup water
  • 1 cup sour cream
  • 12 oz package Nestle Delightfuls Mint Flavor
  • 2 cups mint chocolate chip ice cream
Cooking Directions
  1. In a large mixing bowl, stir together cake mix, pudding mix, eggs, oil, water, sour cream, and mint Delightfuls (reserve a small handful for sprinkling on top of dishes.
  2. Spray the inside of a 4 quart slow cooker with non stick spray and pour batter into slow cooker.
  3. Cover and cook on high 2 1/2 - 4 hours or until a cake tester comes out with crumbs sticking to it, but not wet.
  4. Turn off Crockpot and allow cake to set 10 minutes. Spoon hot cake into serving dishes and top with a scoop of ice cream and reserved mint Delightfulls.









I honestly can't wait to try the other varieties of Nestle Toll House Delightfulls! In addition to the mint, there is peanut butter, cherry, and caramel filling available. You could easily substitute the mint in this recipe with any of the other flavors and just choose a complimentary ice cream flavor to go with.
