New to Me Foods That I’m Totally Loving

Hello!

I’m glad you liked my wavy hair tutorial yesterday! Some of you mentioned that you had straight hair that doesn’t curl very well, and I wanted to suggest spraying pieces of hair with hairspray before wrapping it around the curling iron. Maybe you’ve tried that already, but thought I’d give that little tip for those of you that wanted to give it a shot.

I thought it’d be fun to do a What I Ate Wednesday post today, mostly because my day involved several new to me foods and recipes that I’m totally loving, and I wanted to share them with you! If you read last week’s post, you probably remember me talking about my efforts to gain a few LBs and get some more body fat on me. I’ve been working on this by being more intentional with my eating and also focusing on higher fat foods.

breakfast

I had my usual as of lately – hot oatmeal with peanut butter and chia seed stirred in and covered with whole milk and topped with strawberries. Simple and delish.

snack

Chobani with a side of cute fire truck PJs! I picked up this new limited batch green tea flavored Chobani at the grocery store on Monday and decided that it could be really good or really bad. I ended up loving it! I’m a big green tea lover though, just FYI.

snack

I picked up some medjool dates that I spotted on sale at Target last week as I was curious what they were all about. I know they’re pretty popular among food and health bloggers, but believe it or not, I had never tried them! They look kinda gross, but they are out of this world yummy, especially topped with some peanut butter. I had three topped with peanut butter while sharing a couple with Hunter (he loves them too!). I chased ‘em down with a glass of whole milk.

Leftover Chicken Tortilla Soup for the win! Topped with cheddar cheese and half of an avocado. Talk about YUM!

And a chocolate chip cookie for dessert.

snack

I’ve had almond flour sitting in my pantry for awhile now, so I decided I needed to put it to good use. It was a rainy, dreary day so it was the perfect day to do some baking! I checked out my Healthy Snacks Pinterest board and came across this banana bread that looked pretty darn delicious. I did make a couple substitutions – I subbed brown sugar for the stevia and used chia seed “eggs” in place of regular eggs because we were out. Topped with some butter (and a side of BodyPump choreography) … pretty darn fantastic.

Perfect Broccoli Cheese Soup was on the menu for dinner. Two big thumbs up on this soup! It was rich, cheesy, and oh so delicious. Not to mention incredibly easy! I haven’t met an Iowa Girl Eats recipe I don’t like yet.

Ben & Jerry’s Chocolate Chip Cookie Dough ice cream … always a winner in my book!

Other than teaching RPM and TBC this morning, Hunter and I will be hanging at home for the rest of the day. We’re down to one car at the moment thanks to some car issues we’re dealing with, so that’s not exactly fun. Car problems are one of my least favorite things to deal with … anyone else?! I’m trying to remember to be grateful that we have another car to get Cody to and from work and that my gym is within walking distance of my house (I should probably walk there more often now that I think about it…), but it’s still a bummer!
