Black Bean Soup




Since old man Winter is not finished with us, I am looking for comfort foods that aren't full of calories and but are full of flavor. This Black Bean Soup is hearty and has an added health benefit and is very filling!
(A single, one cup serving of black beans contains 15 grams of fiber, over half the daily recommended and 15 grams of protein, also half the daily recommended)

Black Bean Soup
2 tablespoons of olive oil 1 medium purple onion, chopped 1 orange bell pepper, chopped 2 jalapeños, seeded and chopped fine 2 garlic cloves, minced 32 oz beef broth 2 (15 oz) cans of black beans, well rinsed and drained 1 (15 oz) can of diced tomatoes, with juices 1 cup of sour cream, for serving 1 jalapeño, thinly sliced lengthwise for garnish
In a large stock pot over medium high heat, add olive oil, onion, bell pepper, jalapeño, garlic and salt. Cook, stirring occasionally, for 3 to 4 minutes until the onions and bell peppers are soft. Add the beef broth, beans and tomatoes and raise temp to high. As soon as the soup comes to boil, reduce temp to low, simmer, uncovered for 25 to 30 minutes and until liquid is reduced by one third. Serve with the sour cream and the sliced jalapeño.
