Dried Bean Soup



My cooking has changed this year since now I'm basically just cooking for myself. Use to I had to have a meat with every meal(why I was so accommodating I have no idea.) Now I really don't care to bother with it and the only meat Gretchen will eat is eggs. Specifically hard boiled. Recently I've started cooking a big pot of bean soup with dried beans. It sounds boring and old. I worked at Cracker Barrel for 8 years and one of the big sellers was a bowl of pinto beans, makes me think of that. But it is delicious, easy, super healthy, and cheap. I used to think using the dried beans was too much work. They are easy. I soak them overnight in water and they are ready the next day for soup. For my latest bowl I used a bag of mixed beans, 2 chopped onions, 32 oz chicken stock and 32 oz water cooked to a boil then turned to low for 2 1/2 hours. Added 2 peeled and chopped sweet potatoes, 1 box frozen chopped spinach, salt and pepper to taste cooked for another 1/2 hour and done. It lasts for about 12-15 servings, depending on how much I waste trying to get Gretchen to eat it. I haven't gotten sick of eating it repeatedly but it could be frozen if I wanted to save part of it for later. Also I like to eat with some homemade bread of some sort. This time I made cornbread. Gretchen prefers her cornbread topped with peanut butter and jelly.
