Game Day (or Superbowl Sunday) is coming, Friends! You may or may not be into football, but either way, you’re going to love my delicious recipe today. I’m always looking for a “lighter” bite, something besides chips and heavy dips, and I think I came up with the perfect recipe.

I’m a tuna gal, I’ve always loved it, I used to can it (100# at a time, fresh off the Oregon coast), and it’s great in salads, sandwiches, and appetizers. So much so, I’ve included a tuna round-up at the bottom of this post. My favorite way to eat it is a tuna melt with zucchini relish on top. Oh, boy! {I just did a massive search and I’ve never posted my Zucchini Relish recipe – so it’s coming this summer!}

Stein Butte.

Sunday this week, my husband and our friends wanted out of the Rogue Valley fog, so we went on a beautiful hike. The trail is called Stein Butte, up past the Applegate Lake (outside of Jacksonville), and to the top, it’s about 4.9 miles. We didn’t hike the whole thing, but we plan to return when we’re better prepared to blaze the almost 10 miles
