Beating Treadmill Boredom, Vegetable Fried Rice Secret and Let Yourself Believe It

I’m still getting it done in the morning. I’m still not running yet and haven’t run since the race last weekend, My hip feels a little bit better, but there’s no way in heck I’m taking any chances. As soon as I get a little more info on the whole situation I can talk about it more, but for now I’m sticking to cross training.

This morning it was KettleWorx practice for my class tonight and a little time on the elliptical.

I might just have to change the batteries in that bad boy soon. Yep, it’s battery operated. High class friends.

The expensive equipment is being well taken care of though as Rocky’s been keeping the treadmill warm.

Beat Treadmill Boredom

I never made it to the grocery store over the weekend so we’ve been using what we have in the house the past few days and hopefully lasting through the week.

The boys have been asking for their chocolate salad milkshake in the morning and I subbed in some broccoli slaw in the mix.

They actually dug the idea and the smoothie was sucked down.

For two nights in a row now I’ve roasted up that Baby Bok Choy and the Purple Snow Peas I got from Frieda’s.

I thought about stir frying them, but I got lazy and just sprayed them with coconut oil cooking spray and then seasoned them with pepper, garlic salt, ginger and a little spicy salt. I roasted them at 425 convection for I’m guessing about 15-20 minutes. It was delicious. I had it tonight with some Sizzlefish salmon.

Last night I was really out to impress the men so served up the Bok Choy with a little something special.

Ha ha.

Seriously though, awhile ago one of the cashiers at Trader Joe’s let me in a a little secret about how to make really yummy vegetable fried rice from a bag. I actually think it was back when we first got married (over 10 years ago) and she was trying to help me impress my new hubby.

Here’s the little secret since my rice last night passed the test.

heat up some butter in a large pan or wok. Fry up a couple eggs in the butter and break them up.

Add the bag or bags of vegetable friend rice to the pan or wok.

Cook for 5-7 minutes over high heat.

That’s it.

Now go try it, but make sure to keep it a secret.

If you want to go all out, serve up the fancy friend rice with some Costco frozen Orange Chicken.

Now we’re talking.

That’s so true, right? We just have to allow ourselves to believe it. We are capable of so much more than we think we are. In fact, we are MADE for so much more than we think we are.
