H+H Bank Holiday Recipes

Despite the wet and windy weather this week, we’re still planning on making the most of the August bank holiday weekend – after all, it’s the last one of the summer! While we’re all hoping for some beautiful sunshine to mark the end of the season, we’re not holding our breath. So we’re covering all our bases; whether it’s an outdoor picnic or BBQ, or an indoor dinner party or lazy afternoon tea, we have a recipe to suit every event you have planned this weekend! Make it one to remember with some of our delicious, show-stopping and surprisingly easy dishes.

1. Chestnut Pancakes with Coconut Yoghurt

What better way to celebrate a Bank Holiday weekend than with a long, lazy brunch? If you haven’t tried our Chestnut Pancakes with Coconut Yoghurt yet, now is the perfect time to test them out. A simple mix of chestnut flour, eggs and water makes beautiful crêpe-style pancakes. Super easy to whip up try them with savoury fillings, such as goats cheese, rocket and apple or as sweet breakfast treats with berries, coconut yoghurt and orange blossom honey.

2. Mexican Tomato Salsa

If you want to make a really quick and simple starter for a Bank Holiday dinner party, try serving our punchy Mexican Tomato Salsa with some cream cheese and mixed crudités; use a variety of seasonal veg such as cucumber, radish, celery and fennel for a beautiful rainbow spread. 3. Quinoa Scones and Strawberry Chia Jam

There’s nothing quite like a decadent afternoon tea to make you kick back and relax on a long weekend – even cosier if it’s during a typically British Summer and raining outside! Fill your house with the aroma of freshly baked Quinoa Scones and Strawberry Chia Jam and indulge in this comforting (and guilt-free) afternoon snack. Serve these gluten-free bakes and raw, lightly sweetened jam with lashings of organic clotted cream, thick coconut yoghurt or grass fed butter.

4. Peach, Pea and Goats Cheese Salad

Planning a picnic over the long weekend? This Peach, Pea and Goats Cheese Salad is one of our all-time favourites! It’s wonderful on its own for lunch or as an accompaniment to a summer BBQ. This recipe is wonderfully versatile you can’t find peaches try other seasonal fruit like cherries and you can swap the goats cheese for any other favourite cheese – mozzarella, halloumi or blue cheese would also be delicious.

5. Socca Pizzas

For a girls’ night in try our tasty Socca Pizzas; made with just chickpea flour and water and cooked quickly like a pancake, these wholesome pizza bases freeze really well. The toppings are up to you, so you can make them as plain or fancy as you like, with something to suit everyone! For a classic, add prosciutto, buffalo mozzarella and rocket to your pizza base, or get inventive by adding some caramelized onions, pear and blue cheese.

6. Pablo’s Chicken

Our take on southern fried chicken, Pablo’s Chicken is a family-favourite. This succulent dish, baked in a homemade spice and ground almond mix with a crisp, nutty crust is perfect served hot or cold. No breadcrumbs, no vegetable oil, no need to deep-fry – and all with a wonderful flavour. It’s perfect for picnics and easy to make in large quantities for a big crowd. We serve it with a probiotic ketchup (see our book), or just a squeeze of lemon. Adapt it for the BBQ by leaving out the ground almonds and using the cajun flavours as a rub instead, we like to leave it on overnight for the best flavour.

7. Paprika, Lentil and Tomato Soup

A new favourite, (particularly for those rainy days when you don’t want to go to the shops), our Paprika, Lentil and Tomato Soup is the perfect way to use up some of your cupboard stables: tinned tomatoes, lentils, dried herbs and spices. The ultimate comfort food, this hearty soup is cheap and cheerful! Make it using a homemade Bone Broth if you can, and serve with a squeeze of lemon juice, some extra-virgin olive oil and plenty of freshly ground black pepper.

8. Jamaican Gingerbread

Autumn is just around the corner and we’re gearing up for it by making our warming Jamaican Gingerbread. Delicious with a cup of tea – or even for breakfast if you like something sweet to start your day – this gingerbread is sticky, spiced and packed full of flavour. Bananas, eggs and ground almonds give it substance, while nutmeg, cinnamon, ginger and blackstrap molasses add that fiery taste that’s sure to keep you feeling warm and happy even on a blustery day.
