Trendy, Tasty, Healthy! Breakfast – Recipes

Chia pudding, green smoothies, porridge or banana pancakes – Instagram and other social media platforms helped to create a proper breakfast cult over the past couple of years. Poached eggs on wholegrain bread with avocado, and with that a flat white and fresh acai bowl? There you are! Especially in major cities like Berlin or London you’ll find options like these on the menus of more and more cafés. Scrambled egg and cheese sandwich is over. After all, homemade granola with quinoa and fresh fruit looks so much nicer on Instagram and Snapchat than a bowl of Fruit Loops with milk, doesn’t it?

For all of you who prefer to try new dishes at home than to pay a lot of money in a café, I made a little selections of my favorite recipes. Enjoy :) !

Chia Pudding

The breakfast of 2015.
Why? Chia seeds are not only super healthy, but also look amazing in combination with fresh fruit. You don’t even need Instagram filters for a pretty pic. Moreover, as little as two teaspoons of the miracle seed contain 250 milligrams of calcium (very good for beautiful hair and nails), 5 milligrams Omega 3 acids (great for the brain) and about 10 milligrams of fibers.
Are they tasty though? And how to prepare them?

Step 1:
Whether vegan or not, chia seeds are easy to mix with any kind of milk. Using (vanilla flavored) almond milk yields particularly tasty results with a nice consistency. You won’t even need to add honey or agave syrup as the almond milk is usually sweet enough.

Step 2:
The basic ratio in mixing chia seeds with milk is 2:1. Two table spoons of chia seeds and one mug of milk will give you the perfect mix and a great basis for a delicious breakfast. Stir it together, put it in the fridge, done. It’s absolutely foolproof.
Important: it’s a good idea to stir the pudding from time to time to avoid little clumps.

Step 3:
It takes about 30 to 45 minutes for the pudding to get the right consistency. For the best results, prepare it in the evening and enjoy it in the morning. You can also add fruit according to taste.

So, Chia Pudding is amazing. I have another dish for you that made it into the top 3 new breakfast trends: Banana Pancakes!
A fabulous and tasty treat, contains no flour or sugar, and is very easy to prepare.

Step 1:
For one person one banana is enough. Simply blend it with two eggs, which is easiest to do with a hand mixer. Tasty tip: if you enjoy cinnamon, add a little teaspoon full to the ‘dough’.

Step 2:
pre-heat a little saucepan and melt some coconut butter. You can also use regular oil instead of coconut butter, but I would advise you to not use regular butter for this one. Pour some of the dough onto the pan and fry the pancake on mid heat for about 4-5 minutes on both sides until they’re golden brown.

Step 3:
Your pancakes will taste even more delicious if you add fresh fruit. If you like it really sweet, add some honey or agave syrup for an amazing treat.

When you’re in a rush in the morning, one trendy option is particularly suited to provide you with a healthy (to go) breakfast. I am, you guessed it, talking about green smoothies. Admittedly, it may sound a bit weird: spinach and green cabbage as a juice? The thing is, combined with sweet fruit it really tastes delicious and provides your body with vitamins and nutrients galore.

Step 1:
Choose the fruit and veggies you like, wash them well and then chop them into small pieces. Tip: put the fruit in the freezer overnight and you’ll have an extra fresh drink in the morning. Perfect for hot days!

Step 2:
Put all ingredients in a mixer, add a little bit of water to get a creamier consistency, and blend it all for 2 to 3 minutes.
