Smashed Potatoes with Garlic Sweet Pea Mash

Kinda like a french fry, but – dare I say it- BETTER!?!

Honor the deliciousness of the potato by making them even more delicious-er.

Ingredients Potato Ingredients
  • 10 dutch yellow baby potatoes (or any small sized potato you prefer)
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon chives
  • 2 tablespoons scallions
  • 2-3 tablespoons aged cheddar cheese, shredded
Garlic Sweet Pea Mash Ingredients
  • 1 cup sweet peas, steamed
  • 2 cloves garlic
  • ¼ cup nonfat greek yogurt (sub vegenaise or ½ cup extra sweet peas)
  • 2 tablespoons scallions
  • 1 tablespoon chives
  • ⅛ teaspoon salt
  • ⅛ teaspoon pepper

Instructions
  1. Bring a large (salted) pot of water to a boil.
  2. Once boiling add your potatoes and boil for 30 min.
  3. Preheat your oven to 450.
  4. Once your potatoes are soft, drain the water. Grease a baking sheet with 1 tablespoon of olive oil, add your potatoes and smash them flat with a potato masher or wooden ladle.
  5. Add the remaining 1 tablespoon of olive oil to the tops of your potatoes. Season with salt, pepper, chives and scallions.
  6. Bake for 25 minutes.
  7. While your potatoes are baking, blend together all of your Garlic Sweet Pea Mash ingredients. Set aside.
  8. Once your potatoes are cooked, sprinkle your shredded cheddar cheese over the top, and add a tablespoon sized dollop of your Garlic Sweet Pea Mash to the top of each potato.
  9. EAT UP.

I’ll be the first one to tell you, potatoes are one of – if not my tippy top – favorite food. They are so versatile. You can mash them, or smash them, or fry them, or bake them, or slice ’em or dice ’em. And there are also so many varieties growing from the earth it BLOWS MY MIND. At some point in my life I was literally eating a potato a day. Literally. As in no jokes about it. Potatoes all day, errr day. So today I took all of my combined knowledge of the best of potato eating and potato making and made some of the yummiest potatoes EVER.

Let’s talk about how this garlic sweet pea mash thing works in combo with the potatoes… Well it’s a known thing that garlic goes well with potatoes. DUH. But then think about adding a slightly sweet flavor like sweet peas, along with the rich flavor of the sharp cheddar. WOAH. Yeah. Your mind may melt upon eating, but that’s okay. I’ve heard it goes back to normal.

I would be really into the idea of eating these as a snack or an appetizer. But also, I’d be VERY down to eat them as a meal all by themselves. The carbs will keep you going for a while, so it’s not gonna leave you flat an hour after you eat them. That is something I value highly in a snack especially. Because I’m not trying to eat a snack just to have to eat another snack 5 seconds later cause I’m still hungry. This is a one-and-done sort of situation. A “snack of the gods” thing, you might say.
