31 Days of Sheet Pan Dinners to Make in May

Welcome to the month with the shortest name and that says goodbye to April showers to deliver those beautiful May flowers.

We’re back with our monthly theme of what to make for dinner for each day of the month, because I think we can all agree, we can all use a nudge to get out of the dinner time rut.

The month of May surprisingly sneaks up on the home cook, especially if you’re one who is feeding kids. We haven’t quite yet moved all the way into the flexibility of grill season so there’s still a need for meal planning going on thanks to end of the year homework and spring sports practices topping out the schedule. And don’t even get me started on where to find time to master the next level of Candy Crush.

Thankfully, sheet pan dinners are here to save the day. They’re a welcome way to plop a bunch of ingredients onto a foil-lined baking sheet (it’s the secret to easy clean-up) and roast an all-in-one meal. Plus, they’re generally more on the healthy side given there’s no need for frying or layering of oils, gravies, or other comfort food creations you’ve been ladling on dinners all winter long.
