My Favourite Food | Pea and Pancetta Spaghetti


When we got back from India I was REALLY craving some of my favourite meals and I've decided that THIS is probably my favourite food of all time. My last recipe post (Fruity Iced Tea) went down really well so I thought I'd share another favourite! Aslan and I are certainly not the masterminds behind this delicious concoction- you can read the REAL recipe here!
Things You'll Need: Spaghetti (or whatever type of pasta you prefer) Parmesan Cheese (YUM) Pancetta (we're cheap so we used lardons) Frozen Peas 6 Egg Yolks 1 Big Onion Garlic Salt & Pepper Extra Virgin Olive Oil Tabasco (add a bit of this right at the end)
Here's Aslan in his jammies chopping up the onion! I have to leave the room whenever an onion has been slivered because my eyes will water for HOURS!

I came back just in time to test my strength with the garlic press. (I'm in my jammies too!)
Mix together your egg yolks, some pasta water and a fair amount of parmesan cheese. Bit of a gross looking mixture, but trust me-the end result is delicious!
Fry the onion, garlic and lardons until they start to caramalise & then add the frozen peas. After your pasta is finished cooking, combine the other ingredients into the pasta pot. Don't forget to season to your tastes at this point, we usually add a healthy amount of salt and pepper, and Aslan always insists on a few good splashes of Tabasco! Energetically mix the beautiful concoction in the pot. Let it sit for a few minutes and then serve up and enjoy! If you're a cheese lover like me you can always add some MORE cheese on top ;)
I'm drooling just remembering the feast I had. This is quite a heavy meal but every now and then you need a little comfort food!
