Buffalo Cauliflower and Chickpea Tacos with Vegan Blue Cheese Sauce

Can someone please tell me how it’s almost March already? Gah, it feels like 2015 is flying by.

The positive side to that is the fact that spring is just around the corner. Flowers are blooming and the sun is starting to set a little later which means it’s actually daylight when I get home from work and I can’t even begin tell you how happy that makes me. Just give me some extra sunshine and a plate of buffalo tacos and I’m set!

That cauliflower is crazy orange, huh? It kind of makes the tacos look like a burning hot flame but truthfully they’re pretty mild on the spice thermometer.

I don’t like really spicy foods so I kept things subtle but if you’re like my husband and you enjoy the sensation of singeing your taste buds off then you can always add a little cayenne or top them off with extra hot sauce. Feel that burn, baby!

Or as my favorite fitness instructor says, if you don’t squeeze those buns nobody else will.
