Poke Nachos

A few months ago, a friend of mine on Oahu posted a photo of Poke Nachos. I was instantly intrigued. It looked delicious! I’m not much of a rice eater so the option of a “chip” was a very interesting way of eating Poke. I did some experimenting and here’s what I came up with:

  • 1lb of Oyster Sauce Poke
  • 1 pkg. of Won Ton Pi cut in half
  • 1 cup of Japanese Mayo
  • Honey to taste
  • Wasabi or Sriracha – optional
  • Diced Green Onions – for garnish
  • Oil for Frying

Heat the oil in a wok. When oil is hot drop in the Won Ton wrappers and fry till crispy. Drain on paper towel lined plate.

In a bowl: mix together the Mayo, Honey & Wasabi or Sriracha. Depending on your taste you can more or less of any of the ingredients. The sauce should be loose enough that you can pour into a squeeze bottle and drizzle over the top of your nachos.

Place your Won Ton chips on a plate or platter, spread the poke over the chips, drizzle the mayo sauce over the top and finish with a sprinkling of green onions. This recipe is now a family favorite! It looks like something “fancy”, but is quite easy to make. Enjoy!
