I’ve been really inspired to create new recipes lately (maybe there’s a new project in the works?!) and I tossed together this quick Paleo Cucumber Sesame Salad with things I already had in my fridge. The cucumbers and mint are light and cool while the red jalapeño adds a bit of spice. If you like it mild, scrape out the seeds and inner white membrane before finely dicing it.
This salad is best eaten fresh because the cucumbers will give up moisture as they sit in the dressing and get watery.
