What are ancient grains, and what the heck do you do with them?

Ancient grains — the term alone sounds romantic and important, like eating them is the wise thing to do. And it is, actually. Ancient grains is a blanket term used for grain and cereal alternatives to the more common wheat, corn and rice. Some are a great gluten-free alternative, and all are packed with nutritional benefits — and unique flavors.

Here are a dozen of the ancient grains you're most likely to find in your supermarket. We'll show you what dishes they're typically used for, with some basic cooking instructions.

Keep in mind that if you try some of these, just like rice, ancient grains need to be stored in a cool, dry place. Those rice storage containers are a great way to make your ancient grains last. Or use an extra-large Mason jar for a beautiful way to store your grains right on your countertop.
