Easter is around the corner and these could serve as great dishes! So, if you want to land straight into your favourite island then here are few quick recipes:

Before preparing any dish: Let the Octopus bath in hot and boiling water for an hour. You can put some basil and bay leaves in the boiling water until its soft and tender.

Baby Octopus & Spaghetti: Baby octopus adds a different flavour and shine to the dish. Boil the spaghetti in separate pan by putting few drops of oil. As soon as it is boiled, pour some cold water so that they don’t stick with each other. Keep the spaghetti aside. Now, pour some oil in the pan, put garlic cloves, grated ginger and chopped onions, Octopus pieces, capsicum, broccoli and carrots too (you can enrich it with as many veggies as you want).

Saute it for some time until they are translucent and then spaghetti to it. Put salt as per taste and other herbs along with to-three drops of vinegar. Garnish it with spring onions and parsley. You can customize the spaghetti by adding tomato sauce or cheese and mayonnaise if you like it with white sauce!

Greek style Octopus recipe (Xtapodi): Westaustralianoctopus said for this recipe, you also need to add red wine vinegar along with other ingredients in the boiling water. Put some oil in a separate pan and add chopped garlic, sliced onions and chopped tomatoes and let it cook for 5-10 minutes until the onions get caramelized and oil separates from veggies.

Take a serving plate and put the boiled Octopus pieces into it. Pour little juice over it from the boiling pan and add pepper and the mixture which we prepared. You can add some berries, shallots and sauce of your choice to complement your taste buds. Put some honey and serve it with crisp and crusted bread.

Grilled Octopus with Rosemary & Thyme: Grilled Octopus adds smokiness to the flavour and give it a crunchy texture. Grilled octopus is one of the famous appetizers which is served across various restaurants. Grilled Octopus can be marinated with different flavours. The secret of tasty grilled octopus is to cook it until its nice and tender.

After it is boiled and becomes soft, marinate it with rosemary and thyme scented mixture. You can dip it in natural moisture of herbs and garlic before charring it over the griller for that extra crisp. Serve it on a plate and drizzle with reserved marinade mixture.

Bonus tip: Never compromise on quality of raw Octopus. Buy it from fish market or super market but always ensure that you buy the one with good quality. Additionally, don’t forget to garnish your dishes with spring onions, parsley or coriander leaves!
