Hellooo, here today with a very easy tomato relish recipe to enjoy with a good old Aussie bbq burger.
As you know the last few weeks or so have been rather busy for me and easy meals have been on the agenda, plus without an oven I’ve had to think up ways to cook meals rather than my fall-back simple throw it in the oven type concoctions…there have been a lot of slow cooker, one-pot affairs and bbqs here.

I have to say, I am not the world’s most talented barbecue-er, I think my English roots of inclement weather ruining a fair few cooking over coals occasions have left me taking the easy route when the sun is shining, life is good and the grilling goes outside.

So, because of my skill set in this department or lack thereof, I rely on really nice meat, with a simple marinade or I buy something to just throw on and add a relish to, or make up a quick and easy rub. These burgers from Woolworths Gold Range are Product of the Year award winners and have been part of the throw it on the bbq cooking of late – so easy, made from top Aussie ingredients and super tasty.

To these I add this simple and quick relish and a salad and all is done and dusted…what I love about this relish recipe is there aren’t many ingredients to fuss with, it tastes great and you can pretty much pop it all in a pan and leave it to get on with itself (my kinda cooking as you know)… then just get on with everything else like the table and the bbq and when you come back it’s all done…and tastes great.

Easy Tomato Relish Recipe

1 large onion finely chopped
2 cloves garlic finely chopped
1 tbsp olive oil
2 tbsp vinegar
500g tomatoes chopped
1 teaspoon curry powder
1 teaspoon mustard powder
4 burgers (I used Woolworths Gold Angus Beef and Wagyu Beef Burgers)

1. add olive oil to pan and then add onion and garlic to soften
2. add all other ingredients and cook on low for about 20 mins
3. serve tomato relish with burgers.

The relish is really good with cold meats and in sandwiches too and keeps in the fridge in a airtight container for 4 or so days.
