It's hard to believe that June is right around the corner and summer will be here before we know it! So to start off summer early here's a super easy and sugar-free popsicle recipe. Hope you'll have fun making them as much as I did.
Printable Recipe Ingredients:
1/2 cup of coconut milk
2 cups frozen berries (whatever type you like, I used a mix of strawberries, blueberries, and raspberries)
2 tablespoons good quality honey
1/2 teaspoon of vanilla extract (optional)
Directions:
Combine everything in a food processor and pulse until completely smooth. Pour into frozen pops mold.
If you have time, make batches of individual berry flavors and freeze them in stripes using a bit of plain coconut milk between the layers.
