We are familiar with Peruvian food as we have a Peruvian restaurant nearby. We love Peruvian Fried Rice.

This time we decided to make the Lima Bean and Pumpkin Stew from The World Food Cafe Cookbook, and was glad we did as it was delicious! Here is the recipe for you in case you would like to try it, along with my variations.
LIMA BEAN AND PUMPKIN STEW
1 lb. Potatoes, cubed 1 lb pumpkin, peeled and cubed (we couldn't find pumpkin this time of year, so we substituted Butternut Squash. ) 4 Tab oil 2 Onions, finely chopped 3 cloves garlic, minced 1 jalapeno, minced 1 can diced tomatoes fresh thyme leaves 2 tea cumin 1 cup Lima beans 1/4 cup fresh or frozen Peas 1/4 cup fresh or frozen corn salt and pepper to taste parsley 1 cup (5 oz) crumbled feta
Cook potatoes and pumpkin in a saucepan of boiling water until soft. Heat oil in pot and cook onion, garlic and jalapeño until soft. Stir in tomatoes, thyme and cumin. Add potatoes and pumpkins. Add beans, peas and corn and cook for 10 minutes. Add salt and pepper. Garnish stew with parsley and feta. Serve with rice or crusty bread.
