My favorite part about Thanksgiving, besides the obvious… (pie!) is the leftovers. So clearly I did the reasonable thing and made turkey and fixings early, for the sole purpose of having some delicious day after recipes.
I love turkey sandwiches and cold turkey straight from the fridge as much as everyone else, but those sandwiches and random pickings can get old and boring real fast. Right?
My mom always made soup with the leftovers. A classic that I’m sure most people stick to year after year, but why not shake things up a bit.
Seeing as the day after Thanksgiving is a Friday and Friday is pizza night…

Homemade pizza dough topped off with a layer of creamy mashed potatoes, followed by stuffing crumbles and shredded turkey… lots of cheese and the finishing touch… a drizzle of turkey gravy.
This pizza is an absolute MUST MAKE.
