{things i made} fluffy french toast

So the good news: the storm wasn't as bad as they said it would be yet it was a still a city-wide snow day. So the even better news? Snow day cooking and eating. I love a good leisurely breakfast–last week it was cornmeal pancakes, this week it's French toast. I've tried lots of recipes but this is my absolute favorite. My only suggestion: add more and more cinnamon. Stay warm!

1/4 cup all-purpose flour
1 cup milk
1 pinch salt
3 eggs
1 teaspoon ground cinnamon, plus more if needed
1 teaspoon vanilla extract
1 tablespoon white sugar
12 thick slices bread

1. Place flour in a large mixing bowl. Slowly whisk in the milk. Whisk in the salt, eggs, cinnamon, vanilla extract and sugar until smooth.
2. Soak bread slices in mixture until saturated.
3. Heat a lightly oiled griddle or frying pan over medium heat. Cook bread on each side until golden brown. Serve hot.
